Selyodka Pod Shuboy (Layered Herring Salad)

Salt-cured herring becomes a lavish centerpiece when layered with apples and a sour cream?mayonnaise dressing in this beautiful composed salad. This recipe first appeared in our May 2011 issue, with the article Riga Revisited.

Ingredients
  • 1 cup mayonnaise
  • 1 cup sour cream
  • kosher salt and black pepper, to taste
  • 3 filets salted herring
  • 1/2 small yellow onion
  • 2 medium yukon gold potato
  • 3 medium carrot
  • 6 eggs, whites and yolks , each passed through a fine strainer
  • 1/2 granny smith apple
  • 2 medium beet
  • 1/4 cup dill weed
  • carrot rose
